The bitters are acids. They bring about the "sharp freshness" of the beers and improve the foaming stability.

Htere are:

Alpha acids = Humulone
Beta acids = Lupulone
Gamma acids = Humulione
Delta acids = Hulupone

There are 5 acids in each of these 4 groups with the same basic molecular structure but different lateral chains. The absolute volume of the bitter acids content and the specific composition is dependent on type and scent.
