The valuable contents of hops are: | Bitters | = | Hop resin | | Aromatics | = | Hop oil/volatile oils | | Tanning agents | = | Polyphenols | The bitters and volatile oils are present in hop meal (Lupulin) which devlop in the resin glands of the umbel leaves. Tanning agents stem mostly from the coarser parts, such as the umbel stalks and cores. Apart from the flavour they impart in beer production, hops also work against germs as they have antiseptic and bacteriostatic properties which help to preserve the beer.
